What is Traditionally Made? 

Traditionally made cheese is 100% naturally aged over a period of time. This process of naturally aging may take from 3 months to 5 years to achieve a superior tasting cheddar. As a cheddar matures naturally, the levels of salt and acids intensify, giving it a rich flavour. Clover Leaf mild cheddar is aged approximately 3 months, medium cheddar is aged 5 - 6 months and our old cheddar is aged for 7 - 9 months. Some cheddars may contain modified enzymes, which speeds up the aging process, however, the flavour and texture will be compromised. At Clover Leaf, we ensure our cheddars are naturally aged so as to offer the highest quality and superior tasting cheddars to our customers.
